Calming Lavender Coconut Ice Cream

Once the rich, tasty gooeyness of ice cream is absorbed into the blood, the blood becomes thick. Lavender is a calming and soothing herb that is a perfect addition to this frozen treat!


1 mason jar
1 can of full fat coconut milk (don’t use low-fat for this recipe)
1/4 of sweetener of your choice (organic sugar cane, coconut sugar, agave nectar, local & raw honey)
2 tbs of chia seeds (soak in little coconut milk for 10 minutes so they can expand)
1 tbs of lavender
Optional: 1 tbs of rose oil (for added flower essence)


Heat coconut milk and sugar over low heat until the sugar is dissolved and it begins to steam. Briskly whisk for one minute. Take off stove and stir in lavender and chia seeds (and rose oil if using). Pour into mason jar and chill in freezer. Enjoy straight of out the jar!
